Cassava Bibingka's main ingredient is good old tapioca. Tapioca or Ubi Kayu was a staple food that kept my mum, aunts and older siblings alive throughout the 2nd world war in Borneo. On its own tapioca can taste boring but when you eat it with butter and sugar, it's very very delicious, it immediately transforms into a breakfast, tea or desert. In this recepi, we bake tapioca twice, first with coconut milk, butter, sugar then we 2nd bake with sweet milk and cheddar cheese. Be careful though, it can be addictive, perfect with tea or when you're taking a break. You can freeze them and when you're ready to indulge, thaw it and have it at room temperature or stick it in the microwave for 5 to 10 seconds depending if you like it warm or hot.
