STICKY DATE PUDDING









I was in Perth a couple of years ago when I heard about this famous Aussie desert called Sticky Date Pudding. Pudding? Dates? Yuck! Yuck! Yuck! I am not a fan of pudding or dates. Please someone save me, how am I going to respectfully decline. I'd say the rest is HISTORY, I couldn't wait to go home and I couldn't wait to test it out.
There are several variations to this cake and whichever one you try will make you happy. If you use the best kind of soft dates (medjool) which gives the sponge its stickiness, you definitely won't have to boil the dates. Smother it with toffee sauce and have it with vanilla ice-cream. The best thing is you can freeze it up to six months.
