I really hope you will have a chance to to try out this recipe, it's a little expensive but it's a great healthy dish and soooo easy to put together, seriously, you can have fun on facebook, write this recipe on your blog and cook at the same time! Of course, minus the cleaning of a 2 kilo garoupa and its scales, scales, scales! Emmmm..I wonder if fish can write charts.
Stuffed Bake Fish
Make sure your fish is fresh, nice, clean and dry, season with enough salt, pepper and juice of 1 lemon. Rub skin of lemon inside of fish. Keep refrigerated.
Turn oven on to 180 degrees.
Chop 1/2 kilo mushrooms, any kind but buttons are best, 1 red chillie, 1 green chillie, 1 red bell pepper, sautee with olive oil, 1 tablespoon butter (not margarine ya)3 pips garlic and 2 red onions (shallots)until cook. Keep aside to cool.
Once cool, spread out enough foil, rub about 1 tablespoon of butter on foil, place fish on greased foil and stuff it up. Take another tablespoon of butter, yes, trust me and rub on upside fish. Close it up nicely, not tightly and bake in oven for 40 mninutes at 220 degrees.
Take out and EAT!
p.s.If you like it more complex and gourmet, add some chopped green apples to the stuffing and you can sprinkle some fresh thyme on fish before wrapping it up.
